Ingredients: 8 slices of swordfish 1 ½ white wine 500 grams of fresh asparagus 1 white onion 1 lemon Extra virgin olive oil Parsley Oregano Salt Black pepper How to make swordfish in asparagus sauce: The first step, in case the swordfish slices would be frozen, it is to let them thaw naturally, without immersing them in water. In a bowl, combine the white wine, finely chopped parsley, the juice of one lemon, a little oregano, salt and ground black pepper to taste. Stir very well until all the ingredients are combined. Place the thawed swordfish slices in a spring and bathe them very well with the previous marinade. Let sit for at least an hour, preferably two to give it more flavor. Add a drizzle of oil to a pan. When it is hot, lower the temperature a little and add the finely chopped onion. Sauté until they start to turn transparent. Wash the asparagus and cut them to taste. Then add them to the pan and sauté with the onions for about 10 to 15 minutes until tender. Add a little salt and pepper to taste. In a baking sheet, place aluminum foil and on top of the swordfish slices. Close very well so that the liquid does not come out and put in the oven for 10 minutes. Then remove the top of the foil and stir in the asparagus and onions for another 2-3 minutes. After the previous time, remove the fish from the oven and serve hot. This swordfish recipe with asparagus sauce is perfect with a garnish of tender potatoes with garlic and parsley. If, on the other hand, you want a more even sauce, simply mix the sauce with the asparagus and onion.
